- 200gpre-cooked spelled
- 1onion
- 500gkale
- 15dried apricots
- 200gfeta
- 50galmonds

Preparation tips
- Cook the spelled in a large saucepan with 3 times its volume of boiling salted water (60cl) over medium heat for 20 to 25 minutes.
- Slice the onion. Wash and slice the kale.
- Cut the dried apricots into pieces. Crumble the feta.
- Prepare a broth with 5cl of hot water and a stock cube.
- Heat 2 tbsp of olive oil in a pan and cook the onion for 2 minutes. Add a pinch of salt.
- Add the kale, cook for 1 minute and add the broth, cook for 5 minutes before incorporating the apricots and a good part of the 4-spice mixture, (keep the rest to season your vinaigrette) and continue for 3 minutes.
- Dry toast the almonds in a pan for a few minutes.
- Prepare your usual vinaigrette by adding the rest of your 4-spice mixture to give it more flavor.
- In a large salad bowl, put the cooked spelled, sprinkle with vinaigrette, sprinkle the feta, the fried vegetables and the almonds, mix and enjoy immediately!!
